Chicken Patties (serves 6 people)
Ingredients:
6 chicken breasts
3 garlic cloves
3 eggs
8 tbsp matzo meal
3 tbsp soy milk (or any other milk substitute)
parsley
salt and pepper
2 tbsp pine nuts (optional)
Grind the chicken and put it in a glass bowl. Add the crushed garlic, the chopped parsley, 3 tbsp matzo meal, 2 eggs, the seasonings and the pine nuts. Mix thoroughly. Shape into patties
Break the remaining egg in a small bowl and whisk. Put the matzo meal in a plate.
Dip each patty into the egg, then coat with the matzo meal and dip it into the egg again – it might be necessary to use one more egg at this stage. Fry four minutes on each side and drain on paper towel before serving.

I make a similar dish, but I use flavored bread crumbs instead of matzo meal for a little extra oomph.

What a good idea. Unfortunately there are no kosher flavoured bread crumbs in my hometown. But I guess I can get some in Paris when I go there next.

What’s the red leaf in the upper right corner? It’s delightful.
You can make bread crumbs with leftover challah and a food processor. I stopped doing those, however, because my son preferred the store-bought crumbs. Sigh.
