I found this recipe more than ten years ago in a cookbook on Moroccan Jewish Food.
Gâteau aux carottes (serves 6 people))
Ingredients:
3 eggs
2 cups of flour
1 cup sugar
1/2 cup oil
2 cups shredded carrots
2 slices of pineapple (crushed)
100 g of sultanas
100 g of walnuts (crushed)
1 pkt baking powder
1 tsp cinnamon
vanilla essence
Beat the eggs. Add sugar, oil and carrots. Mix well. Then add flour, baking powder, fruit and walnuts. Add vanilla and cinnamon. Mix well. Pour into a greased baking pan. Bake for about 45 minutes at 350°.

I think I’ve baked something similar, simple and yummy. I try not to bake, so I’ll eat less.

when you say a pkt of baking powder how much is that exactly?? as i’ve never seen baking powder in packets?? apologies for all the questions but your recipe looks like the best parve cake i’ve seen so far and i am really looking forward to making it!

The pkts we find in France weigh 11 grams.

A regular baking dish is fine. It doesn’t have to be a tube pan.
